½cupchopped red onions

¼cupgrated parmesan
250gsmoked salmon
¼cupcapersdrained
2tablespoonschopped parsley

Instructions
Cook pasta in a large pot of boiling salted water, stirring occasionally, for about 8 minutes or until al dente. Check the package directions for cooking time. Reserve ½ cup pasta water. Drain excess water. Set aside.
Meanwhile, heat oil in a large frying pan over medium-high heat. Add onions, and cook, stirring occasionally, for about 4 minutes or until onions are soft and translucent. Add garlic, and cook, stirring often, for about a minute or until fragrant.
Add cream and Italian seasoning. Stir to combine. Simmer for about 2 minutes.
Add lemon juice and lemon zest. Stir. Add parmesan and plenty of ground black pepper. Cook, stirring occasionally, for about 2-3 minutes or until thickened.
Add salmon, capers and parsley. Toss to combine. Heat through. Taste and season with more salt if needed.
If the sauce is too thick, add reserved pasta water, and simmer for a minute.
To serve, divide pasta among bowls and top with Parmesan and parsley.
