Ingredients

  • 500 g shrimp prawns, peeled and deveined
  • 2 teaspoons soy sauce
  • 1 teaspoon cornstarch corn flour
  • 2 tablespoons oil
  • 2 eggs lightly whisked
  • 2 garlic cloves peeled and chopped
  • ¼ cup chopped onions
  • ¼ cup chopped white of spring onions scallions
  • ¼ cup chopped carrots
  • ¼ cup chopped bell peppers capsicum
  • 2 cups cooked rice
  • 1 teaspoon dark soy sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons Shaoxing wine optional
  • ¼ teaspoon sesame oil optional
  • 1 teaspoon sweet chili sauce
  • Salt and pepper to taste
  • Chopped spring onions or scallions to garnish

Instructions

  • Place shrimp (prawns) in a bowl. Add cornstarch and soy sauce. Season with salt and pepper. Toss to coat.
  • Place a wok or frying pan over medium heat.
  • Add 1 tablespoon oil. Arrange shrimp in a single layer. Fry for 3-4 minutes on each side. Remove from pan. Set aside.
  • Increase heat to high.
  • Add 1 tablespoon oil. Add eggs. Cook, stirring, to scramble the eggs. Remove from pan. Set aside.
  • Add garlic. Stir fry for 30 seconds.
  • Add onions. Stir fry for 2-3 minutes or until soft and translucent.
  • Add spring onions (scallions), carrots and bell peppers (capsicum). Stir fry for 5 minutes or until the vegetables are tender.
  • Add cooked rice, fried shrimp and scrambled eggs.
  • Add dark soy sauce, soy sauce, sweet chili sauce, wine (if using) and sesame oil (if using). Season with salt and pepper.
  • Stir fry for 2 minutes.
  • Garnish with chopped spring onions (scallions).

  • Use frozen peeled prawns for easy dinner prep
  • The preparation time does not include time required to clean the shrimp (prawns)
