Place shrimp (prawns) in a bowl. Add cornstarch and soy sauce. Season with salt and pepper. Toss to coat.
Place a wok or frying pan over medium heat.
Add 1 tablespoon oil. Arrange shrimp in a single layer. Fry for 3-4 minutes on each side. Remove from pan. Set aside.
Increase heat to high.
Add 1 tablespoon oil. Add eggs. Cook, stirring, to scramble the eggs. Remove from pan. Set aside.
Add garlic. Stir fry for 30 seconds.
Add onions. Stir fry for 2-3 minutes or until soft and translucent.
Add spring onions (scallions), carrots and bell peppers (capsicum). Stir fry for 5 minutes or until the vegetables are tender.
Add cooked rice, fried shrimp and scrambled eggs.
Add dark soy sauce, soy sauce, sweet chili sauce, wine (if using) and sesame oil (if using). Season with salt and pepper.
Stir fry for 2 minutes.
Garnish with chopped spring onions (scallions).
