Make guacamole following recipe instructions. Set aside.
Place shrimp (prawns) in a bowl. Add paprika. Toss to coat. Season with salt and pepper.
Meanwhile, place a large frying pan over medium-high heat. Add 1 tablespoon oil. Once the oil is hot, place shrimp (prawns) in the pan in a single layer. Fry for about 2 minutes or until golden. Flip over and fry again for another 1-2 minutes. Remove from heat. Set aside.
Preheat oven to 180 C or 350 F. Line a baking tray with baking paper.
Place baguette slices on the baking tray in a single layer. Drizzle with olive oil. Bake for 15-20 minutes. (Alternatively, you can toast the baguette in a pan over stovetop)
To assemble, top toasted baguettes with guacamole, shrimp (prawns), coriander (cilantro) leaf and red chili.
