Green chutney:
1cupcoriandercilantro leaves
1green chilichopped
¼teaspoonground cumincumin powder
½teaspoonchat masala
½teaspoonchopped fresh ginger

Red chili chutney:
8red chiliesseeds removed
2garlic cloves
1teaspoonchopped ginger
2teaspoonlemon juice
¼teaspoonground cumincumin powder
Salt to taste
Instructions
To make green chutney, place all the ingredients in a food processor, and grind to a smooth paste. Set aside.
To make red chili chutney, soak the red chilies in water for 30 minutes. Place chilies, garlic, ginger, lemon juice, cumin in a food processor. Season to taste. Grind into a smooth paste.
To make sev puri, arrange 5-6 papdis in a single layer in a small plate. Set aside.
Season the mashed potatoes with salt, and stir in 2 tablespoon coriander (cilantro) leaves. Place a tablespoon of potatoes on each papdi. Top with 1 teaspoon date chutney, 1 teaspoon red chutney (if you are using), and 1 teaspoon red green chutney. Sprinkle with chaat masala and ground cumin.
Top with onions and ½ cup sev or chickpea noodles. Garnish with pomegranate arils. You can also add more chopped onions, tomatoes and coriander (cilantro) leaves.
Serve immediately.
