Ingredients

Sev puri:

  • 20 papdis or crackers recipe link just below this recipe
  • 2 boiled potatoes mashed
  • ½ cup tamarind date chutney recipe link below this recipe
  • ½ cup green chutney recipe below
  • ¼ cup red chutney optional (recipe below)
  • 2 tablespoon chat masala
  • 2 tablespoon ground cumin cumin powder
  • 2 cups sev or crispy chickpea noodles
  • 1 small onion chopped
  • ½ cup chopped coriander cilantro leaves
  • 1 cup pomegranate arils to garnish
  • 1 tomato chopped, to garnish
  • Coriander cilantro leaves, to garnish

Green chutney:

  • 1 cup coriander cilantro leaves
  • 1 green chili chopped
  • ¼ teaspoon ground cumin cumin powder
  • ½ teaspoon chat masala
  • ½ teaspoon chopped fresh ginger
  • 2 tablespoon lemon juice
  • Salt to taste
  • Water

Red chili chutney:

  • 8 red chilies seeds removed
  • 2 garlic cloves
  • 1 teaspoon chopped ginger
  • 2 teaspoon lemon juice
  • ¼ teaspoon ground cumin cumin powder
  • Salt to taste

Instructions

  • To make green chutney, place all the ingredients in a food processor, and grind to a smooth paste. Set aside.
  • To make red chili chutney, soak the red chilies in water for 30 minutes. Place chilies, garlic, ginger, lemon juice, cumin in a food processor. Season to taste. Grind into a smooth paste.
  • To make sev puri, arrange 5-6 papdis in a single layer in a small plate. Set aside.
  • Season the mashed potatoes with salt, and stir in 2 tablespoon coriander (cilantro) leaves. Place a tablespoon of potatoes on each papdi. Top with 1 teaspoon date chutney, 1 teaspoon red chutney (if you are using), and 1 teaspoon red green chutney. Sprinkle with chaat masala and ground cumin.
  • Top with onions and ½ cup sev or chickpea noodles. Garnish with pomegranate arils. You can also add more chopped onions, tomatoes and coriander (cilantro) leaves.
  • Serve immediately.

Notes

- Sev puri is all about sev, so add as much as you like
- This is one of the popular street foods from Mumbai, and is very similar to papdi chat
- You should use thin nylon sev in this recipe
- Add raw mangoes when they're in season
