Ingredients

  • 2 large cucumbers
  • ¾ cup thick Greek yogurt
  • 1 teaspoon ground cumin cumin powder
  • ½ teaspoon dried chili flakes
  • 1 tablespoon chopped tomatoes
  • 1 sprig of coriander cilantro leaves (optional)
  • Salt to taste
  • Mint leaves to garnish

Instructions

  • Remove the ends and cut each cucumber into 1-inch rounds. You can use a vegetable peeler to score the length of cucumbers to create a stripped effect.
  • Using a small spoon, scoop out the seeds from the center of each cucumber round to form a cup.
  • To make the raita filling, combine together yogurt, ground cumin, red chili flakes, tomatoes and coriander (cilantro) leaves in a large bowl. Season with salt.
  • Spoon the mixture into the cucumber cups.
  • Garnish with mint leaves.
  • Chill until serving time.
