Ingredients

  • 1 kg frozen French fries
  • 2 teaspoons oil + 1 tablespoon oil
  • 4 teaspoons taco seasoning
  • 500 g minced ground beef
  • ½ cup chopped onions
  • ½ cup chopped bell peppers capsicum
  • ½ cup shredded cheddar cheese
  • Salt and pepper to taste

Toppings:

  • Chopped avocados
  • Jalapeños sliced
  • Coriander cilantro leaves
  • Green onions chopped

To serve:

  • Salsa
  • Sour cream

Instructions

  • Preheat oven to 220 C or 450 F. Line a baking sheet with baking paper.
  • Place the French fries in a single layer. Sprinkle with 2 teaspoons taco seasoning and 2 teaspoons oil. Toss the fries. Bake for 15-20 minutes or until crisp and cooked through. (Check the package instructions for cooking times)
  • Meanwhile, heat 1 tablespoon oil in a large frying pan over medium-high heat. Add beef, onions and bell peppers (capsicum). Season with salt and pepper. Cook, stirring occasionally, for about 10-12 minutes or until cooked through. Add 2 teaspoons taco seasoning. Stir to combine. Heat through.
  • Remove fries from oven. Top with beef mixture and cheese. Bake again for another 3-4 minutes or until cheese is melted.
  • Garnish with avocados, jalapeños, coriander (cilantro) leaves and green onions.
  • Serve with salsa and sour cream.
