Murtabak

Lamb mince stuffed pancakes.

Ingredients

For the Flat Bread:

  • 2 cups plain flour
  • 3 tablespoon melted butter ghee, or oil
  • Salt
  • Lukewarm water

For the Filling:

  • 500 g beef, chicken, or lamb mince
  • ½ teaspoon ginger paste
  • ½ teaspoon garlic paste
  • 1 medium onion chopped
  • 2 eggs beaten
  • ½ teaspoon ground turmeric
  • 2 tablespoon curry powder
  • A handful of coriander leaves
  • ½ cup green peas or grated carrot optional
  • Salt to taste
  • Oil

Instructions

Prepare the Dough:

  • Place plain flour in a deep bowl, and rub in melted butter, ghee, or oil with your fingers. Sprinkle enough salt, and add water to make dough. Knead well. Keep is aside, covered, for about 10-15 minutes.

Make the Filling:

  • Heat oil in a pan, and fry onion, and ginger and garlic pastes. Throw in minced meat and cook well. Add curry powder, coriander leaves, and salt, and cook for few more minutes. Also add the veggies if you are using them.

Make Murbatak:

  • Make small balls out of the prepared dough. Roll it out. Make sure it’s very thin.
  • Then brush the rolled out dough generously with the beaten egg, and place a few spoonfuls of the filling in the center.
  • Now fold the pancake starting from one side so that you will get a rectangular parcel in the end.
  • Place a pan over low to medium heat. Rub some oil on it. Cook the parcel turning them occasionally. Repeat the process until all the filling and dough are used up.
