Ingredients

  • 1 and ½ cups roasted peanuts skins removed
  • 1 cup finely chopped cucumbers
  • 1 cup finely chopped red onions
  • 1 green chili finely chopped
  • ½ cup pomegranate arils
  • 1 teaspoon chat masala
  • ¼ cup chopped coriander cilantro leaves, optional
  • Juice of 1 small lemon
  • Salt to taste

Instructions

  • Place peanuts, cucumbers, red onions, green chilies, pomegranate arils, and coriander (cilantro) leaves (if using) in a large bowl.
  • Add chat masala and lemon juice.
  • Toss.
  • Season with salt.
  • Serve immediately.

Notes

  • Pomegranate - Replace pomegranates with chopped green apple when they are not in season. 
  • More ingredients - Radish, celery, and red bell peppers (capsicum) are also great additions to this salad.
