Ingredients

  • 400 g your favorite noodles I used thin Singapore style noodles
  • 1 tablespoon oil
  • 2 garlic cloves peeled and chopped
  • 2 teaspoons chopped fresh ginger
  • ¼ cup sliced onions
  • 1 cup vegetables cut lengthwise (carrots, bell peppers or capsicum, whites of 1 stalk spring onions or scallions)
  • ½ teaspoon ground cumin cumin powder
  • ¼ teaspoon ground black pepper black pepper powder
  • ½ teaspoon red chili powder
  • 1 teaspoon chat masala
  • 2 eggs
  • 1 tablespoon soy sauce
  • ¼ cup chopped spring onion scallions, green part only
  • Juice of half of one lemon
  • Salt to taste
  • Chopped spring onions scallions, to garnish

Instructions

  • Cook noodles following the package directions. Set aside.
  • Place wok or large frying pan over high heat.
  • When hot, add oil.
  • Add garlic, ginger and onions, and stir fry for 2 minutes or until the onions soften slightly.
  • Add vegetables, and stir fry for 2 minutes or until the carrots are tender but crisp.
  • Add cumin, ground black pepper, red chili powder and chat masala. Stir fry for few seconds.
  • Add eggs. Scramble and cook for about 2 minutes.
  • Combine scrambled egg with the vegetable mixture.
  • Add cooked noodles, soy sauce and spring onion (scallions) greens.
  • Toss well to combine.
  • Squeeze in lemon juice. 
  • Garnish with more spring onions (scallions).
