Cook noodles following the package directions. Set aside.
Place wok or large frying pan over high heat.
When hot, add oil.
Add garlic, ginger and onions, and stir fry for 2 minutes or until the onions soften slightly.
Add vegetables, and stir fry for 2 minutes or until the carrots are tender but crisp.
Add cumin, ground black pepper, red chili powder and chat masala. Stir fry for few seconds.
Add eggs. Scramble and cook for about 2 minutes.
Combine scrambled egg with the vegetable mixture.
Add cooked noodles, soy sauce and spring onion (scallions) greens.
Toss well to combine.
Squeeze in lemon juice.
Garnish with more spring onions (scallions).
