Ingredients

  • 2 cups macaroni
  • 1 tablespoon olive oil
  • 2 garlic cloves peeled and minced
  • ½ cup chopped onions
  • 2 tablespoons tomato paste
  • ½ tablespoon Italian seasoning
  • ½ teaspoon red chili powder
  • ½ teaspoon garam masala
  • ¾ cup heavy cream thickened cream
  • 1 cup grated cheddar
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Chopped coriander cilantro leaves, to garnish

Instructions

  • Place macaroni in a large pot of salted boiling water. Cook for 8-10 minutes or until al dente. Check package for cooking instructions. Reserve 1 cup pasta water. Drain. Set aside.
  • Heat oil in a large frying pan or skillet over medium-high heat.
  • Add garlic. Sauté, stirring, for a few seconds or until fragrant.
  • Add onions. Sauté, stirring occasionally, for 2-3 minutes or until soft and translucent.
  • Add tomato paste. Sauté, stirring, for 1 minute.
  • Add Italian seasoning, red chili powder and garam masala. Sauté, stirring, for few seconds.
  • Stir in cream. Add pasta water if needed. Season with salt and pepper. Stir to combine. Simmer for 2-3 minutes.
  • Add macaroni, grated cheddar and butter. Stir to combine. Garnish with coriander (cilantro) leaves.
