Ingredients

  • 1 cup dried black eyed pea beans or lobia or 3 cups (750 ml) canned black eyed peas
  • 1 cup chopped cucumber
  • 1 cup chopped red onions
  • 1 cup chopped tomatoes
  • 2 tablespoons green chilies
  • 1 tablespoon lemon juice
  • ¼ cup coriander cilantro leaves
  • 2-3 teaspoon chaat masala
  • ½ teaspoon amchur dry mango powder
  • Salt and pepper to taste

Instructions

  • Rinse and soak black eyed peas (beans) in 3 cups water. Drain.
  • Place peas in a saucepan. Add a little water to cook peas. Cook for 5-6 minutes or until tender. Set aside.
  • Transfer to a large bowl. Add cucumber, tomatoes, red onions, green chilies and coriander (cilantro) leaves.
  • Add lemon juice.
  • Sprinkle with chaat masala and amchur (dry mango) powder.
  • Toss.
