Instructions
Place flour, sugar and salt in a medium bowl. Whisk to
combine. Make a well in the center.
Add egg, butter, milk, lemon juice and lemon zest. Whisk to make smooth batter.
Pour batter into a 500ml capacity microwave safe mug.
Place mug in microwave. Microwave on high for 90 seconds.
Add your favorite toppings – melted white chocolate, lemon curd, whipped cream.
Serve immediately.
