Ingredients

  • 4 tablespoons self raising flour
  • 2 tablespoons granulated sugar caster sugar
  • A pinch of salt
  • 1 egg at room temperature
  • 3 tablespoons melted and cooled butter
  • 3 tablespoons milk
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest

Instructions

  • Place flour, sugar and salt in a medium bowl. Whisk to
    combine. Make a well in the center.
  • Add egg, butter, milk, lemon juice and lemon zest. Whisk to make smooth batter.
  • Pour batter into a 500ml capacity microwave safe mug.
  • Place mug in microwave. Microwave on high for 90 seconds.
  • Add your favorite toppings – melted white chocolate, lemon curd, whipped cream.
  • Serve immediately.
