Heat oil in a large frying pan over medium heat.
Add onions. Sauté, stirring occasionally, for about 2-3 minutes or until lightly browned.
Add ginger and garlic. Sauté, stirring, for 1 minute or until fragrant.
Add ground turmeric, ground coriander, paprika and red chili powder. Sauté, stirring, for about 1 minute or until fragrant.
Add tomatoes. Bring to a boil. Reduce heat and simmer for about 2-3 minutes or until the tomatoes are soft and mushy.
Add cream and enough water to make a thick sauce. Stir to combine. Season with salt.
Simmer, stirring occasionally, for about 3-4 minutes. Add more water if needed.
Add garam masala and coriander (cilantro) leaves. Stir to combine. Simmer for about 1 minute.
Stir in shredded turkey. Garnish with more coriander (cilantro) leaves if you like.
