Kerala Beef Roast

Ingredients

Cook beef:

  • 1 kg chuck, gravy (braising) beef, cut into 2 cm cubes
  • 1 teaspoon ground coriander
  • ½ teaspoon ground fennel
  • ½ teaspoon ground cumin
  • ½ teaspoon ground black pepper
  • ½ teaspoon red chili powder
  • 3 garlic cloves, minced
  • 2 cm ginger, minced
  • ½ cup water
  • Salt to taste

Beef roast:

  • 1 tablespoon oil, preferably coconut oil
  • 1 cup sliced onions
  • 2 green chilies, slit
  • 1 sprig curry leaves
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground coriander
  • ½ teaspoon red chili powder
  • 1 small tomato, sliced
  • 1 teaspoon garam masala
  • Salt to taste

Garnish:

  • Curry leaves

Cook beef:

  • Place beef in a large saucepan or pot over medium-high heat.
  • Add coriander, fennel, cumin, black pepper, red chili powder, garlic, and ginger. Pour in water. Season with salt.
  • Cover and cook for about 40-45 minutes or until the beef is tender.

Make beef roast:

  • Heat oil in a large heavy bottomed frying pan over medium-high heat.
  • Add onions. Cook, stirring occasionally, for about 2-3 minutes or until the onions start to brown.
  • Add green chilies and curry leaves. Saute, stirring, for about 1 minute.
  • Reduce heat to low. Add turmeric, coriander, and red chili powder. Saute, stirring, for about 30 seconds or until aromatic.
  • Add tomatoes. Cook, stirring, for about 2-3 minutes or until mushy.
  • Add cooked beef and the cooking liquid. Stir to combine. Season with salt.
  • Bring to a boil. Simmer for about 33-4 minutes or until the liquid reduces and the masala coats the beef.
  • Add garam masala. Stir. Heat through.
  • Garnish with curry leaves.
  • Serve with parotta or rice.
