Kerala Banana Fritters |Pazham Pori | Ethakka Appam

Ingredients

  • 1 ripe plantain see notes, cut into 6 pieces
  • ¾ cup plain flour or all purpose flour
  • ¼ cup rice flour not roasted
  • ¼ teaspoon ground cardamom
  • A small pinch of ground turmeric
  • 2-3 tablespoon white sugar depending on the sweetness of banana
  • 1- 1 and ¼ cups water
  • Oil for deep frying

Instructions

  • Cut the banana into 4-6 pieces.
  • In a large bowl, combine together plain flour, rice flour, cardamom, sugar, and ground turmeric. Add enough water to make smooth batter.
  • Meanwhile, add enough oil to cover the bottom of a large skillet over medium heat. Dip the banana pieces in batter, and place them in hot oil. Do not overcrowd the pan. Fry until golden. Transfer the fried banana fritters to a plate lined with absorbent paper.
  • Serve them hot with coffee or tea.

Notes

These banana fritters are usually made with ripe plantains. As plantains are not available here, I use regular large bananas in the recipe. The fritters come out perfect all the time.
