Instructions
Separate yolks from whites. Add a pinch of salt to egg yolks and whisk lightly. Set aside.
Add a pinch of sugar to egg whites. Using an electric beater, beat whites until thick and fluffy.
Add yolks to whites. Fold in gently. Set aside.
Meanwhile, heat butter in a small frying pan over low heat.
Add egg mixture. Cover with a lid immediately. Cook for about 3-4 minutes or until the egg is set.
Serve immediately.
