Heat 1 tablespoon oil in a large frying pan over medium-high heat.
Add pork. Season with salt.
Stir fry for about 10 minutes or until browned all over.
Reserve 1 tablespoon oil, and discard the remaining oil.
Add 1 sliced onions, ground turmeric, ground coriander, ground cumin, ground fennel, red chili powder, ground black pepper, garam masala, minced garlic, minced ginger and water.
Stir to combine.
Cook, covered, for about 45 minutes or until the pork cubes are cooked through. Add more water if required.
In another frying pan, heat 1 tablespoon oil.
Add 1 sliced red onion, green chili, curry leaves and coconut flakes (if using).
Saute, stirring, for about 2-3 minutes or until the onions are browned.
Add pork with water or sauce. Stir fry for 4-5 minutes or until you get a very thick sauce coating the pork.
Squeeze in 1 lemon and stir in chopped coriander (cilantro) leaves.
Stir to combine. Heat through.
Garnish with coriander (cilantro) leaves.
Serve with rice or naan.
