Ingredients

Fried chicken:

  • ¾ cup all-purpose flour plain flour
  • ¼ cup cornflour
  • ½ teaspoon baking powder
  • A pinch of salt
  • ¾ cup chilled soda water or ice cold water
  • 1 kg chicken breast cut into cubes

Honey sauce:

  • 1 teaspoon cornflour
  • 2 teaspoon water
  • 1 tablespoon oil
  • 1 teaspoon minced garlic garlic paste
  • 4 tablespoon honey
  • 1 teaspoon rice wine vinegar
  • ½ cup water
  • Salt to taste

Honey chicken:

  • Sesame seeds to sprinkle on top
  • Chopped spring onions to garnish

Instructions

Fried chicken:

  • Place all-purpose (palin) flour, cornflour, and baking powder in a bowl. Season with salt. Stir to combine. Add soda water little by little to make lump-free smooth batter. Leave to rest for 15 minutes. Add chicken cubes. Toss to coat.
  • Meanwhile heat oil for deep frying over medium-high heat. Add chicken in batches, and deep fry until golden brown. Drain on an absorbent towel. Set aside.

Honey sauce:

  • Combine cornflour and water to make smooth paste. Set aside.
  • Reserve 1 tablespoon frying oil. Heat this oil in a frying pan over medium-high heat. Add garlic. Saute, stirring constantly, for a minute or until fragrant. Add honey, rice wine vinegar and water. Season with salt. Add cornflour mixture. Simmer, stirring constantly, for 1-2 minutes or until the honey sauce thickens.

Honey chicken:

  • Toss fried chicken in the honey sauce. Sprinkle with sesame seeds. Garnish with spring onions.
