Peel the potatoes and cut into batons or long sticks. Rinse in water. Keep the potato slices immersed in water until ready to use.
Boil a pot of water. Add potatoes. Parboil or simmer until half cooked. Drain. Dry with paper towel. Dust with rice flour. Set aside.
Meanwhile, heat oil for deep frying. When the oil is hot (but not smoking), add the potatoes. Fry until golden. Fry in batches if needed. Do not overcrowd the pan.
When golden, drain onto an absorbent towel. Season one half of the fries with herbs (I used rosemary) and salt. Season the other half with chat masala, herbs (I used mint) and salt.
