Place flour, baking powder, salt and oil in a large bowl.
Starting with ½ cup water, bring the ingredients together with a wooden spoon to form soft dough.
Dust a clean work surface with flour and tip out the dough. Knead for a minute or two until all the ingredients are combined and the dough is soft.
Divide dough into 8-10 equal parts. You will get 8 large or 10 medium tortillas. Roll into balls. Cover with a damp tea towel. Set aside for 15 -20 minutes.
Dust a clean work surface and rolling pin with flour. Pat and flatten the dough balls slightly, then roll out each ball into 10 cm rounds.
Place a cast iron pan or frying pan over medium heat. When the pan is hot, place the rolled out tortilla in it. When one side puffs up, flip over and brush with oil or melted butter. Flip again and brush the other side with oil or melted butter. When both sides are cooked with beautiful brown spots, remove from pan.
Repeat with the remaining rolled out tortillas.
Sprinkle with chopped coriander (cilantro) or parsley if you like.
