Ingredients

Coriander paste:

  • 1 inch fresh ginger roughly chopped
  • 4 garlic cloves chopped
  • 3 small green chilies chopped
  • ¾ cup mint leaves
  • 1 cup coriander cilantro leaves

Marinade:

  • 1 tablespoon yogurt
  • teaspoon ground turmeric turmeric powder
  • ¼ teaspoon ground coriander coriander powder
  • ¼ teaspoon ground cumin cumin powder
  • ½ teaspoon red chili powder
  • ¼ teaspoon garam masala
  • 1 teaspoon rice flour or all purpose flour
  • ½ teaspoon chat masala
  • Salt to taste

Paneer tikka:

  • 200 g paneer cut into cubes
  • 1 cup diced onions
  • 9 bamboo skewers soaked in water for 20 minutes

Instructions

Coriander paste:

  • Place ginger, garlic, green chilies, mint leaves and coriander (cilantro) leaves in a food processor. Add a little water if needed. Process to a smooth paste. Set aside.

Marinade:

  • Place coriander paste, lemon juice, ground turmeric, ground coriander, ground cumin, red chili powder, garam masala, rice flour and chat masala in a large bowl. Season with salt. Stir to combine.
  • Add paneer cubes. Marinate for 30 minutes in the refrigerator.

Hariyali paneer tikka:

  • Preheat grill to medium-high heat.
  • Thread paneer cubes and diced onions onto the bamboo skewers. Leave a 1-inch gap on top of the skewers. Grill skewers for 5-10 minutes, flipping halfway through.
