Place ginger, garlic, green chilies, mint leaves and coriander (cilantro) leaves in a food processor. Add a little water if needed. Process to a smooth paste. Set aside.
Marinade:
Place coriander paste, lemon juice, ground turmeric, ground coriander, ground cumin, red chili powder, garam masala, rice flour and chat masala in a large bowl. Season with salt. Stir to combine.
Add paneer cubes. Marinate for 30 minutes in the refrigerator.
Hariyali paneer tikka:
Preheat grill to medium-high heat.
Thread paneer cubes and diced onions onto the bamboo skewers. Leave a 1-inch gap on top of the skewers. Grill skewers for 5-10 minutes, flipping halfway through.
