Heat 1 tablespoon oil in a wok over high heat. Add beef. Break up the lumps and stir fry for about 5-6 minutes or until browned. Remove from pan.
Add eggs. Scramble and stir fry for about 2 minutes. Remove from pan.
Heat 1 tablespoon oil in the same wok.
Add garlic and whites of spring onions (scallions). Stir fry for about 1 minute.
Add chopped vegetables. Stir fry for about 2 minutes or until tender crisp.
Add cooked rice, beef, egg, soy sauce, oyster sauce and white pepper. Season with salt if needed.
Stir fry for about 3 minutes.
Add chopped spring onions (scallions). Stir fry for 1 minute.
Garnish with chopped spring onions (scallions).
