Ground Beef Fried Rice

Ingredients

  • 2 tablespoons oil
  • 500 g ground (minced) beef
  • 3 eggs lightly whisked
  • 2 garlic cloves chopped
  • ½ cup chopped whites of spring onions (scallions)
  • 2 cups chopped vegetables (bell peppers or capsicum, green beans, corn)
  • 4 cups cooked rice cold day-old
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon ground white pepper
  • 2 tablespoons chopped spring onions (scallions)
  • Salt to taste
  • Chopped scallions (spring onions) to garnish

Instructions

  • Heat 1 tablespoon oil in a wok over high heat. Add beef. Break up the lumps and stir fry for about 5-6 minutes or until browned. Remove from pan.
  • Add eggs. Scramble and stir fry for about 2 minutes. Remove from pan.
  • Heat 1 tablespoon oil in the same wok.
  • Add garlic and whites of spring onions (scallions). Stir fry for about 1 minute.
  • Add chopped vegetables. Stir fry for about 2 minutes or until tender crisp.
  • Add cooked rice, beef, egg, soy sauce, oyster sauce and white pepper. Season with salt if needed.
  • Stir fry for about 3 minutes.
  • Add chopped spring onions (scallions). Stir fry for 1 minute.
  • Garnish with chopped spring onions (scallions).
