Ingredients

  • 500 g fresh asparagus
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • ¼ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 1 ½ tablespoon grated parmesan
  • Juice of half of lemon
  • ½ teaspoon lemon zest

Instructions

  • Preheat oven to 200ºC (400ºF).
  • Trim the tough, woody ends. Pat dry with a paper towel.
  • Place asparagus on a large rimmed baking sheet.
  • Add olive oil, garlic, garlic powder, smoked paprika, and cayenne pepper. Season with salt and pepper.
  • Toss to coat.
  • Arrange in a single layer.
  • Bake for about 12-15 minutes, or until the asparagus is tender and lightly charred on the tips.
  • For the last 1-2 minutes of roasting, sprinkle with grated parmesan.
  • Once melted, remove from oven, and immediately drizzle with lemon juice. Top with lemon zest.

Notes

  • Cooking time - Thin asparagus will be ready in 7-9 minutes, while thick spears may require 12-15 minutes or longer.
  • Drying - Pat dry thoroughly to remove excess moisture from the spears.
  • Avoid overcrowding - The spears need sufficient space for hot air to circulate to encourage roasting and prevent steaming.
