COOK ONION:

olive oil

large yellow onions
sliced
COOK RICE:
▢

butter
▢

minced garlic
garlic paste
▢

tablespoons
dried thyme
▢

cups
vegetable broth
vegetable stock
▢

cups
rice
long grain rice or basmati rice, rinsed
▢

cup
grated parmesan cheese

Instructions
COOK ONION:
Heat a large frying pan over medium heat.
Add butter and oil.
Add onions, sauté 15-20 minutes or until caramelized. Remove from heat.
COOK RICE:
To the same pan, add butter.
Add garlic. Sauté, stirring, for one minute or until fragrant.
Add thyme and vegetable broth (stock). Bring to a boil.
Add rice. Season with salt and pepper. Reduce heat. Simmer for about 15-20 minutes. (Don’t forget to check the packet instructions for cooking time)
Cook until rice is tender, and stock (broth) is absorbed. Remove from heat. Stir in cheese.
Leave to cool for 5-10 minutes.
Stir in fried onions.
