chopped (potatoes, carrots and green beans)

frozen green peas

Water
▢

chopped parsley leaves

regular or flavored mayonnaise

mini tart shells or wonton cups
▢
Salt and pepper to taste
Instructions
Boil water in a large saucepan. Season with salt.
Add vegetables except green peas. Cook for 3 minutes. Add green peas. Cook for another 1 minute or until tender. Drain. Set aside to cool completely.
Place vegetables in a large bowl. Add parsley and mayonnaise.
Toss veggies in mayonnaise. Season with salt and pepper.
Scoop mixture into tart shells or wonton cups. Top with a
slice of cherry tomatoes and more chopped parsley leaves if you like.

Parsley can be substituted with dill, chives or coriander
