Eggplant Pizza

Healthy, low-carb pizza on an eggplant base

Ingredients

  • 2 large eggplants aubergines, cut into 1cm thick round pieces
  • ¼ cup pizza sauce
  • ½ teaspoon dried oregano
  • ½ cup grated parmesan
  • Basil leaves to garnish (optional)
  • Salt

Instructions

  • Sprinkle sliced eggplants with plenty of salt. Set aside and allow to “sweat” for about 20 minutes.
  • Wipe off with a paper towel.
  • Preheat oven to 180C / 350 F. Line a baking tray with baking paper.
  • Arrange eggplant slices in a single layer. Bake for about 20 minutes.
  • Top eggplant slices with pizza sauce, parmesan and oregano. Bake for another 5-10 minutes or until cheese is melted.
  • Garnish with fresh basil if you like. Serve immediately.
