large eggplants
aubergines, cut into 1cm thick round pieces

cup
pizza sauce
▢

teaspoon
dried oregano
▢
½
cup
grated parmesan
▢
Basil leaves
to garnish (optional)

Instructions
Sprinkle sliced eggplants with plenty of salt. Set aside and allow to “sweat” for about 20 minutes.
Wipe off with a paper towel.
Preheat oven to 180C / 350 F. Line a baking tray with baking paper.
Arrange eggplant slices in a single layer. Bake for about 20 minutes.
Top eggplant slices with pizza sauce, parmesan and oregano. Bake for another 5-10 minutes or until cheese is melted.
Garnish with fresh basil if you like. Serve immediately.
