Place butter, sugar, cocoa powder, milk and salt in a deep pan over high heat. Bring it to a boil. Let it simmer for a minute, or until the sugar dissolves. Remove from heat.
Stir in vanilla extract. Then stir in oats. Mix well and set aside to cool.
Once cooled, the mixture will become dry and firm enough to roll out balls. Scoop out 1 tablespoon mixture and roll out into a ball. Repeat until all the oat mixture is used up.
Store chocolate oat bites in an airtight container in the refrigerator for up to a week.
