Easy Mango Chicken Burger

Ingredients

Chicken patties:

  • 500 g ground minced chicken
  • 1 teaspoon ground all spice
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 2 garlic cloves, peeled and minced
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 tablespoon oil
  • Salt and pepper to taste

Spicy mayo:

  • ½ cup mayonnaise
  • 1 tablespoon sriracha sauce

To assemble burger:

  • 6 burger buns lightly toasted
  • Mango slaw
  • 1 cos lettuce
  • Fries to serve (optional)

Instructions

Chicken patties:

  • Place chicken, all spice, paprika, cayenne pepper, dried thyme, garlic, egg and ¼ cup breadcrumbs in a bowl. Mix. Season with salt and pepper.
  • Moisten hands with a little water and shape chicken mixture into 6 flat, round patties.
  • Place remaining breadcrumbs in a shallow bowl.
  • Coat patties with breadcrumbs.
  • Meanwhile heat oil in a large frying pan or skillet over medium-high heat.
  • Cook patties in batches for about 5-6 minutes or until the bottoms are well browned.
  • Flip and cook for another 3-4 minutes or until browned and cooked through.

Make spicy mayo:

  • Combine together mayonnaise and sriracha sauce in a small bowl.

Make mango slaw:

  • Follow the recipe instructions to make mango slaw.

Assemble burger:

  • Spread spicy mayo on the bottom bun.
  • Top with lettuce, chicken patty and mango slaw. Place the top bun over the slaw.
  • Repeat with the remaining burger buns, lettuce, chicken patties and slaw.

Notes

  • Serving suggestions - Potato fries, sweet potato fries, green salad.
  • Mangoes - Make sure the mangoes are ripe but firm. You can add mango slices to the burger as an extra layer for added sweetness.
  • Chicken - Sub with turkey if you like.
