Place chicken, all spice, paprika, cayenne pepper, dried thyme, garlic, egg and ¼ cup breadcrumbs in a bowl. Mix. Season with salt and pepper.
Moisten hands with a little water and shape chicken mixture into 6 flat, round patties.
Place remaining breadcrumbs in a shallow bowl.
Coat patties with breadcrumbs.
Meanwhile heat oil in a large frying pan or skillet over medium-high heat.
Cook patties in batches for about 5-6 minutes or until the bottoms are well browned.
Flip and cook for another 3-4 minutes or until browned and cooked through.
