Heat oil in a large frying pan or skillet over medium-high heat.
Add onions. Sauté, stirring occasionally, for about 2-3 minutes or until browned.
Add ginger, garlic and green chilies. Sauté, stirring, for about 1 minute or until aromatic.
Add tomatoes. Sauté, stirring occasionally, for about 3-4 minutes or until the tomatoes break down and turn mushy.
Add minced meat.
Add ground coriander, garam masala, ground cumin and red chili powder. Stir. Cook, breaking up with a wooden spoon, for 6-8 minutes or until browned.
Stir in chopped coriander (cilantro) leaves.
Remove from heat. Allow to cool completely. Divide the mixture into 6 equal portions.
