Marinate chicken:

Noodles:

lo mein noodles or your favorite noodles

Instructions
Marinate chicken:
Place chicken in a large bowl.
Add cornstarch (corn flour), soy sauce, Shaoxing wine and ground white pepper.
Coat chicken with the marinade. Season with salt. Set aside.
Make sauce:
Combine together soy sauce, oyster sauce, dark soy sauce, chicken broth (stock) and sesame oil in a small bowl. Set aside.
Cook noodles:
Cook noodles following the package directions. Set aside.
Make lo mein:
Heat oil in a large wok or frying pan over high heat.
Add chicken. Stir fry for 4-5 minutes or until cooked through.
Cook chicken in batches if needed.
Remove chicken from the pan.
Add onion, ginger and garlic. Stir fry for a few seconds or until they are aromatic.
Add vegetables. Stir fry for about 1 minute or until the vegetables are tender but crisp.
Add fried chicken and cooked noodles.
Add sauce. Stir fry for 2 minutes.
Garnish with spring onions (scallions).
Notes
You can also add other veggies like napa cabbage, broccoli, mushrooms etc.
Although lo mein noodles are the classic option for this dish, feel free to use your favorite.
