You’ll love this yogurt- veggie combination in a sandwich flavored with tempered spices. Fast and satisfying way to start your day or a perfect light lunch idea!
In a bowl, combine together bell peppers (capsicum), carrots, onions and red chili flakes. Season with salt and pepper. Set aside.
Spread the yogurt mixture on one side of 5 slices of sourdough bread. Top with the remaining bread slices. Set aside.
Meanwhile, heat oil in a small frying pan over medium-low heat. Add mustard seeds. Fry for 1 minute. Add curry leaves. Fry for 30 seconds.
Place the sandwiches in the pan. Do not overcrowd the pan. When one side of sandwich turns crispy and golden, flip over to toast the other side.
Serve immediately.

Hung yogurt is a great substitute for Greek yogurt. To make hung yogurt, place regular plain yogurt in a muslin cloth placed in a strainer. Set the strainer on a bowl and let the excess liquid from the yogurt drain into the bowl. The result is super thick and creamy yogurt.
