Instructions
Marinate and fry chicken:
Place garlic powder, cayenne pepper and ground all spice in a small bowl. Stir to combine. Sprinkle this mixture over the chicken thighs. Season with salt and pepper.
Meanwhile, heat butter and olive oil in a large pan over medium-high heat.
Place chicken thighs in a single layer. Cook, 4-5 minutes on each side or until browned. Remove chicken from pan.
Creamy garlic chicken:
To the same pan, add butter and olive oil. Add onions, and sauté, stirring occasionally, for 2-3 minutes or until soft and translucent.
Add garlic. Sauté, stirring, for a minute or until fragrant. Add mushrooms. Sauté, stirring occasionally, for 2-3 minutes or until tender.
Pour in chicken broth (stock) and cream. Add parmesan, rosemary, parsley and red chili flakes (if using). Stir to combine. Season with salt and pepper.
Reduce heat to medium-low. Simmer for 5 minutes.
Return fried chicken to the pan. Simmer for about 10 minutes or until chicken is cooked through.
Garnish with more parsley leaves if you like.
To serve, spoon over rice, pasta or mashed potato.

Notes
- Apart from mushrooms, you can add more veggies like chopped spinach, frozen peas, broccoli, cherry tomatoes. I like to add them towards the end of cooking process alongside fried chicken.
