Ingredients

  • 2 cups pasta of your choice I used penne
  • 2 tablespoons olive oil
  • 700 g boneless chicken I used chicken breasts, cut into strips
  • 2 garlic cloves peeled and chopped
  • 1 red onion finely chopped
  • 1 green bell pepper capsicum, chopped
  • 1 red bell pepper capsicum, chopped
  • 1 tablespoon ground cumin cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon ground black pepper black pepper powder
  • 1 cup thickened cream heavy cream
  • 1 cup grated parmesan
  • 3 tablespoons chopped parsley
  • Salt to taste
  • Parmesan to garnish
  • Chopped parsley to garnish

Instructions

  • Cook pasta in a large saucepan filled with salted boiling water. Reserve 1 cup pasta water. Drain pasta. Set aside.
  • Heat olive oil in a large frying pan over medium-high heat.
  • Add chicken. Cook, stirring occasionally, for about 5-6 minutes or until the chicken is cooked through. Remove from pan.
  • To the same pan, add garlic. Saute, stirring, for 30 seconds
    or until fragrant.
  • Add onions and bell peppers (capsicum). Saute, stirring
    occasionally, for about 2-3 minutes or until soft and tender.
  • Add chicken back in pan.
  • Add ground cumin, red chili powder and ground black pepper. Season with salt. Stir fry for 1 minute.
  • Add cream. Bring to a boil. Simmer for 2 minutes.
  • Add parmesan. When cheese starts to melt, add cooked pasta and parsley. If the sauce is too thick, add pasta water. Toss. Heat through.
  • Garnish with grated parmesan and parsley if you like.
