Creamy Bacon And Leek Pasta

Ingredients

  • 350 g your favorite pasta
  • 2 teaspoons oil
  • 200 g chopped bacon
  • 1 leek white part only, thinly sliced
  • 2 garlic cloves peeled and chopped
  • ½ cup broccoli florets
  • 400 ml heavy cream thickened cream
  • 2 tablespoons grated parmesan
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste
  • Chopped parsley to garnish

Instructions

  • Bring a large pot of salted water to boil. Add pasta. Cook, for about 8-10 minutes or until al dente. Reserve 1 cup pasta water. Drain. Set aside.
  • Meanwhile, heat oil in a large frying pan over medium-high heat.
  • Add bacon. Cook, stirring, for 3-4 minutes or until browned.
  • Remove bacon from the pan.
  • Reserve 2 tablespoons bacon fat in the pan. Discard the rest.
  • Add leek, garlic and broccoli. Cook, stirring occasionally, for about 5 minutes or until the veggies are tender.
  • Stir in cream.
  • Add pasta water. Season with salt and pepper. Stir to combine. Reduce heat to low. Simmer for about 3-4 minutes or until the sauce thickens.
  • Add bacon and pasta. Toss to combine.
  • Add parmesan and parsley. Stir. Heat through.
  • Divide pasta among serving bowls.
  • Garnish with chopped parsley.

  • You can add green peas if you like
  • Parsley can be substituted with basil
