Bring a large pot of salted water to boil. Add pasta. Cook, for about 8-10 minutes or until al dente. Reserve 1 cup pasta water. Drain. Set aside.
Meanwhile, heat oil in a large frying pan over medium-high heat.
Add bacon. Cook, stirring, for 3-4 minutes or until browned.
Remove bacon from the pan.
Reserve 2 tablespoons bacon fat in the pan. Discard the rest.
Add leek, garlic and broccoli. Cook, stirring occasionally, for about 5 minutes or until the veggies are tender.
Stir in cream.
Add pasta water. Season with salt and pepper. Stir to combine. Reduce heat to low. Simmer for about 3-4 minutes or until the sauce thickens.
Add bacon and pasta. Toss to combine.
Add parmesan and parsley. Stir. Heat through.
Divide pasta among serving bowls.
Garnish with chopped parsley.
