¼cupfresh lime juiceapproximately 3 limes
1tablespoonlime zest
¼cupolive oil
2garlic clovesminced
1teaspoonground cumin
1teaspoonpaprika
Salt and pepper to taste

1kgchicken thighsor chicken breasts, drumsticks or whole chicken
Instructions
To make cilantro lime marinade, combine together cilantro (coriander leaves), lime juice and zest, olive oil, garlic, cumin and paprika. Season with salt and pepper.
Coat chicken with the marinade. Marinate in the refrigerator for at least 30 minutes or overnight if possible.
Preheat oven to 190 C or 375 F.
Place chicken in a baking tray.
Spoon the remaining marinade over the chicken.
Bake for 25-30 minutes or until cooked through and the internal temperature of chicken reaches 75 C or 165 F.

You can bake, pan fry, grill, or air fry these chicken thighs
To pan fry, cook 5 minutes on one side, and then flip and cook 7-8 minutes on the other side
Serve this with steamed rice and salad, salsa or pico de gallo.
