Ingredients

Chicken tikka:

  • 4 cups cooked basmati rice or brown rice
  • 1 large cucumber
  • 8 cherry tomatoes cut in halves
  • Few sprigs of coriander cilantro leaves, to garnish

Cucumber rolls:

  • To make the cucumber rolls, using a vegetable peeler peel cucumber into thin strips and roll up. Set aside.

Assemble chicken tikka rice bowl:

  • Scoop the rice into 4 serving bowls. Divide chicken tikka evenly among the bowls. Arrange cucumber rolls and tomatoes over the rice. Drizzle with mint chutney. Garnish with coriander (cilantro) leaves.
