400gboneless chickenI used chicken thigh, sliced into thin strips

2cupsgrated parmesan
2tablespoonchopped parsley

Instructions
Cook fettuccine in a large saucepan of salted boiling water following packet directions. Drain. Set aside.
Heat 1 tablespoon butter and 1 tablespoon oil in a frying pan over medium-high heat. Add chicken. Season with salt and pepper. Stir fry for 3-4 minutes or until browned and cooked through. Remove from pan. Set aside.
Heat 1 tablespoon butter and 1 tablespoon oil in the same pan over medium-high heat. Add onions and garlic. Sauté, stirring occasionally, for 2-3 minutes or until onions turn soft and translucent. Stir in cream. Simmer for 5-7 minutes.
Stir in grated parmesan. Season with salt and pepper. Add fried chicken back into the pan. Add cooked pasta. Toss.
Garnish with chopped parsley.
