Ingredients

  • 350 g 12 ounce fettuccine
  • 2 tablespoon butter
  • 2 tablespoon oil
  • 400 g boneless chicken I used chicken thigh, sliced into thin strips
  • 1 small onion chopped
  • 2 garlic cloves grated
  • 2 cups heavy cream thickened cream
  • 2 cups grated parmesan
  • 2 tablespoon chopped parsley
  • Salt and pepper to taste

Instructions

  • Cook fettuccine in a large saucepan of salted boiling water following packet directions. Drain. Set aside.
  • Heat 1 tablespoon butter and 1 tablespoon oil in a frying pan over medium-high heat. Add chicken. Season with salt and pepper. Stir fry for 3-4 minutes or until browned and cooked through. Remove from pan. Set aside.
  • Heat 1 tablespoon butter and 1 tablespoon oil in the same pan over medium-high heat. Add onions and garlic. Sauté, stirring occasionally, for 2-3 minutes or until onions turn soft and translucent. Stir in cream. Simmer for 5-7 minutes.
  • Stir in grated parmesan. Season with salt and pepper. Add fried chicken back into the pan. Add cooked pasta. Toss.
  • Garnish with chopped parsley.

- You can also add your favorite veggies like mushrooms, broccoli and cherry tomatoes
