Caramel Pasta Payasam (Kheer) | Pasta Pudding | Video

Ingredients

  • ½ cup macaroni
  • ½ cup white sugar
  • 500 ml milk
  • ½ cup condensed milk
  • ¼ teaspoon ground cardamom cardamom powder
  • 1 tablespoon ghee
  • ¼ cup cashew nuts, almonds and raisins roasted in 2 tablespoons ghee

Instructions

  • Place a large pot of water over high heat. Bring to a boil.
  • Add macaroni. Cook, for about 9-10 minutes or until al dente. Drain. Set aside.
  • Place a large frying pan over low heat.
  • Add sugar.
  • When sugar caramelizes and turns golden (this will take about 4-5 minutes), pour in milk, stirring constantly. Continue stirring for about 2-3 minutes or until caramel dissolves.
  • Stir in condensed milk and ground cardamom.
  • Increase heat to medium.
  • Simmer for about 2 minutes.
  • Stir in ghee and roasted nuts.
  • Garnish with more roasted nuts if you like. 

Notes

  • Macaroni can be substituted with small shells or elbows if you like. Gluten free pasta also works well in this recipe.
