Combine together ground or minced meat, garlic, paprika and Italian seasoning in a large bowl. Season with salt and pepper. Divide the mixture into 12 balls, one for each tortilla. Press a thin layer of mince onto the tortillas. Set aside.
To make the Big Mac sauce, combine together mayonnaise, tomato sauce (ketchup), sriracha sauce, dijon mustard and pickle relish in a small bowl. Set aside.
Place a frying pan or skillet over medium heat. When the pan is hot, add a little oil. Place one tortilla in the pan with the meat side down. Place a saucepan on top to flatten it. Cook for 2-3 minutes and then flip.
Place a cheese slice on top. Cover with a lid and cook for 30 seconds or until the cheese is melted. Remove from pan and repeat with the remaining tacos. Serve immediately.
To serve, top the tacos with pickles, lettuce and big mac sauce.
