Ingredients

  • 8 slices sourdough bread
  • 4 tablespoons unsalted butter
  • 4 tablespoons dijon mustard
  • 2 cups leftover mashed potatoes or sweet potatoes
  • 4 thick slices of leftover roast turkey
  • 8 tablespoons leftover turkey gravy
  • 2 tablespoons leftover homemade or canned cranberry sauce
  • Handful of rocket leaves arugula

Instructions

  • Spread butter on both sides of each bread slice. Set aside.
  • Heat a medium frying pan or skillet over low heat. Place bread slices in a single layer. Cook, turning once, 2-3 minutes or until bread is toasted. Cook in batches if needed. Remove from pan. Set aside.
  • Spread dijon mustard on one side of four bread slices and top with mashed potatoes or sweet potatoes, turkey, gravy, cranberry sauce and rocket leaves (arugula).
  • Top with remaining bread slices. Serve warm.
