Place white sugar in a food processor and grind to a smooth powder. Set aside.
Place a large frying pan or skillet over medium-low heat. Add ghee. Once the ghee is hot, add besan. Cook, stirring, for about 10-12 minutes or until the mixture changes its texture and turns into a paste. If the mixture is too dry, add a few teaspoons of melted ghee and if the mixture is too wet, add more roasted besan).
Remove from heat. Set aside to cool.
When the mixture is lukewarm, add powdered sugar, cardamom and nuts (if using). Using hands, mix until all the ingredients are incorporated into the besan mixture.
Roll out small lemon sized balls.
Decorate with chopped pistachios and rose petals if you like.
