Ingredients

  • 4 tablespoons ghee clarified butter
  • 2 cups besan gram flour or chickpea flour, sifted
  • ½ cup white sugar
  • ¾ teaspoon ground cardamom cardamom powder
  • 2 tablespoons chopped nuts
  • Chopped pistachios to decorate
  • Dried rose petals to decorate (optional)

Instructions

  • Place white sugar in a food processor and grind to a smooth powder. Set aside.
  • Place a large frying pan or skillet over medium-low heat. Add ghee. Once the ghee is hot, add besan. Cook, stirring, for about 10-12 minutes or until the mixture changes its texture and turns into a paste. If the mixture is too dry, add a few teaspoons of melted ghee and if the mixture is too wet, add more roasted besan).
  • Remove from heat. Set aside to cool.
  • When the mixture is lukewarm, add powdered sugar, cardamom and nuts (if using). Using hands, mix until all the ingredients are incorporated into the besan mixture.
  • Roll out small lemon sized balls.
  • Decorate with chopped pistachios and rose petals if you like.
