Ingredients

  • 2 bell pepper capsicum rings
  • 2 eggs
  • Salt and pepper to taste
  • 1 teaspoon oil or cooking spray

Instructions

  • Heat oil in a shallow frying pan over low heat. Place the bell pepper rings in it. Break egg into the rings. Season with salt and pepper. Cover with a lid, and cook the eggs to your liking.
