Heat 1 tablespoon oil in a wok or large frying pan or high heat. Add oil and swirl around to coat the sides of the wok.
Add beef. Stir fry 2-3 minutes or until beef is browned and just cooked. Transfer to a plate. Stir fry beef in batches if needed. (Alternatively, you can cook the beef in a pressure cooker. Place beef alongside ½ cup water in the pressure cooker. Season with salt. Cook until 5-6 whistles)
Heat 1 teaspoon oil in the wok over medium-high heat. Add mustard seeds and allow to splutter. Add shallots, and sauté, stirring occasionally, for 1-2 minutes or until browned. Add garlic and ginger. Sauté, stirring, for 1 minute or until fragrant.
Add green chilies (if using). Sauté, stirring, for a few seconds. Add ground turmeric, ground coriander and red chili powder. Stir fry for few seconds.
Add beef, garam masala, crushed peppercorns and curry leaves (if using). Stir fry for 1 minute or until the beef strips get a dark brown color.
Garnish with more curry leaves if you like. Serve with rice or noodles
