Badam Milk | Indian Almond Milk

Classic Indian almond milk loaded with almonds and spiced with cardamom!

Ingredients

Almond paste:

  • 15-20 almonds or badam
  • ½ cup hot water
  • 2 tablespoons milk

Almond milk:

  • 2 cups milk
  • 2 teaspoons sugar
  • ½ teaspoon ground cardamom
  • 2-3 saffron strands

Garnish (optional):

  • Chopped almonds or pistachios
  • Saffron strands

Instructions

  • Place almonds in a bowl.
  • Cover with hot water.
  • Soak for 15 minutes.
  • Peel off the skin.
  • Place peeled almonds in a food processor.
  • Add 2 tablespoons milk and process to a smooth paste.
  • Meanwhile, place 2 cups milk in a large saucepan over medium-high heat.
  • Add sugar, and stir to dissolve sugar.
  • Once milk is hot, add ground cardamom, saffron and almond paste. Stir to combine.
  • Bring to a boil. Simmer for about 10 minutes over low heat.
  • Transfer to serving cups. Serve immediately hot or cold.
  • Garnish with chopped almonds or pistachios and saffron.

Notes

  • Variations - You can replace almonds with any nut you like to make your favorite version.
  • Milk - Oat or soy milk can be used instead of regular milk.
  • Sweetener - Sugar is the classic addition, but soaked and pureed dates, honey or any sweeteners also work well.
