Ingredients

Garlic butter:

  • 2 tablespoons unsalted butter softened
  • 1 teaspoon minced garlic garlic paste
  • 1 teaspoon chopped parsley

Avocado mash:

  • 2 large avocados pitted and mashed
  • ½ teaspoon red chili red pepper flakes
  • Salt and pepper to taste

Grilled cheese sandwich:

  • 4 slices bread
  • 4 tablespoons grated mozzarella or cheddar

Instructions

  • To make garlic butter, combine together butter, garlic and parsley in a small bowl. Set aside.
  • To make avocado mash, combine together mashed avocados and red chili flakes in a small bowl. Season with salt and pepper. Set aside.
  • To make the sandwich, spread one side of each bread slice with garlic butter. Top the other side of two bread slices with avocado mash and cheese. Top with the remaining bread slices, buttered side up.
  • Heat a large frying pan over medium-low heat. Place the sandwiches, one at a time, in the pan. When one side is brown and cheese has started to melt, flip and brown the other side.
  • Slice and serve immediately.
