1white bread slicesoaked in water or ½ cup breadcrumbs

1green chilichopped (optional)

1cupbreadcrumbsfor coating
Oilfor shallow frying
Aloo tikki burger:
4brioche or regular burger bunssplit
4tablespoonsbutter
1cupchili mayonnaisesee notes, 4 tablespoons for each burger
1cupsliced onions
1large ripe tomatothinly sliced
French friesto serve
Instructions
Aloo tikki (Mashed potato patties):
Squeeze out excess water from soaked bread.
Combine all the ingredients except oil and breadcrumbs for coating in a large bowl. Divide the mixture into 4 even portions and shape each portion into a disc. Coat in breadcrumbs. Set aside.
Meanwhile, heat oil for shallow frying in a large frying pan over medium-high heat. Add the patties and cook for 2-3 minutes each side or until golden brown. Transfer to a plate.
Aloo tikki burger:
Spread a tablespoon of butter on the cut side of burger buns. Place the buns in the pan with cut side facing down. Toast until golden brown. Remove from pan.
To assemble the burger, place the base of each burger bun on serving plates. Top with chili mayo, aloo tikki, onions, tomatoes and top of burger buns. Serve immediately.
Add a side of French fries if you like.
