Ingredients

Aloo Tikki (Mashed Potato Patties):

  • 2 large potatoes boiled, peeled and mashed
  • 1 white bread slice soaked in water or ½ cup breadcrumbs
  • ¼ teaspoon ground turmeric turmeric powder
  • ½ teaspoon ground cumin cumin powder
  • 1 teaspoon chat masala
  • ½ teaspoon garam masala
  • ¼ teaspoon red chili powder
  • 1 green chili chopped (optional)
  • ¼ cup chopped onions
  • 2 tablespoons chopped coriander cilantro leaves
  • 1 cup breadcrumbs for coating
  • Oil for shallow frying

Aloo tikki burger:

  • 4 brioche or regular burger buns split
  • 4 tablespoons butter
  • 1 cup chili mayonnaise see notes, 4 tablespoons for each burger
  • 1 cup sliced onions
  • 1 large ripe tomato thinly sliced
  • French fries to serve

Instructions

Aloo tikki (Mashed potato patties):

  • Squeeze out excess water from soaked bread.
  • Combine all the ingredients except oil and breadcrumbs for coating in a large bowl. Divide the mixture into 4 even portions and shape each portion into a disc. Coat in breadcrumbs. Set aside.
  • Meanwhile, heat oil for shallow frying in a large frying pan over medium-high heat. Add the patties and cook for 2-3 minutes each side or until golden brown. Transfer to a plate.

Aloo tikki burger:

  • Spread a tablespoon of butter on the cut side of burger buns. Place the buns in the pan with cut side facing down. Toast until golden brown. Remove from pan.
  • To assemble the burger, place the base of each burger bun on serving plates. Top with chili mayo, aloo tikki, onions, tomatoes and top of burger buns. Serve immediately.
  • Add a side of French fries if you like.

- To make chili mayo, combine together 1 cup regular mayonnaise and 2 teaspoons (or more) sriracha sauce
