15 Minute Garlic Butter Mushrooms

Ingredients

  • 250 g button mushrooms
  • 4 tablespoons unsalted butter
  • 2 garlic cloves chopped
  • 1 teaspoon dried thyme
  • Juice from half of lemon
  • Chopped parsley to garnish

Instructions

  • Clean and pat dry mushrooms. If small, keep them whole, or slice large mushrooms.
  • Heat butter in a skillet or frying pan over medium-high heat.
  • Add butter. When butter melts and bubbles, add garlic. Saute, stirring, for about 1 minute or until fragrant.
  • Add mushrooms. Increase the heat to high.
  • Cook mushrooms, stirring occasionally, for about 3-5 minutes.
  • Lower the heat to medium-high. Add thyme.
  • Season with salt and pepper.
  • Stir. Heat through.
  • Add lemon juice. Stir.
  • Garnish with parsley.

Notes

  • Mushrooms - Replace button with portobello, cremini or Swiss brown mushrooms.
  • Butter - Use olive oil for healthier alternative.
  • Thyme - Replace with rosemary if you like.
  • Lemon juice - Replace lemon juice with soy sauce or balsamic vinegar to customise the flavor.
  • Serving suggestions - Delicious side dish with creamy pasta, noodles, grilled fish or meat, quiche and BBQ ribs. Or add as sandwich filling.
  • Storage instructions - Store in an airtight container in the refrigerator for up to 2 days.
