This vegetarian tikka masala is always a hit! Grilled vegetables are tossed in creamy tomatoey sauce to create the ultimate curry not just for healthy weeknights but also for your vegetarian guests at your next gathering. It’s comforting, simple yet super flavorful.
Vegetarian Tikka Masala Recipe
The base sauce of this recipe is very similar to this chicken tikka masala. Before you start with the sauce, you can make the tikka. As you know, grilled veggies or meat make the centrepiece of all good tikka curries.
All you need to do is toss the veggies in a simple marinade of garam masala, ground turmeric and red chili powder and then grill. I like to cut the veggies into large chunks as they can easily threaded on to a skewer. As with the veggies, you have endless options- just go seasonal for the best.
While the tikka is grilling, make the sauce for this vegetarian tikka masala. Sauté onions in a little oil until lightly browned. Fry some garlic and ginger, and then cook tomatoes. The tomato paste and tomatoes along with cream create the silky smooth vibrant sauce. Beautifully delicious, this sauce is lip-smacking.
You’ll also need to add some chopped coriander (cilantro) leaves for the final touch. The grilled veggies soak up all the flavors to bring you one of the best vegetarian curries in Indian cuisine. Simply the best!

Grilled vegetables in creamy spiced sauce

Ingredients
Veg Tikka:
- 2 cups vegetables (mushrooms, cauliflower florets, pumpkin, bell peppers or capsicum), cut into large chunks
- 1 tablespoon oil
- 2 teaspoons garam masala
- 1 teaspoon red chili powder
- 1 teaspoon ground cumin (cumin powder)
- Water
- Salt to taste
- 5 bamboo skewers, soaked in water for 20 minutes
Veg Tikka Masala:
- 1 tablespoon oil
- 1 cup chopped onions
- 1 tablespoon chopped garlic
- 1 tablespoon chopped ginger
- ½ teaspoon ground turmeric (turmeric powder)
- 1 teaspoon ground coriander (coriander powder)
- ½ teaspoon red chili powder
- 2 tablespoons tomato paste
- ¼ cup canned diced tomatoes
- ¼ cup heavy (thickened) cream
- Water
- 1 tablespoon garam masala
- 2 tablespoons chopped coriander (cilantro) leaves
- Salt to taste
Garnish:
- Chopped coriander (cilantro) leaves
To Serve:
- Steamed rice, naan, parathas
Instructions
Make veg tikka:
- Preheat grill.
- Place garam masala, cumin, red chili powder and oil in a small bowl. Add enough water to make smooth paste. Set aside.
- Place vegetables and spice mix in a large bowl. Toss to coat vegetables in spice mix. Thread vegetables on skewers.
- Grill vegetable skewers for 5-8 minutes per side or until the vegetables just soften and brown around the edges.
Make veg tikka masala:
- Heat oil in a large frying pan or skillet over medium-high heat.
- Add onions. Saute, stirring occasionally, for about 2-3 minutes or until browned.
- Add garlic and ginger. Saute, stirring, for 1 minute or until aromatic.
- Add ground turmeric, ground coriander and red chili powder. Saute, stirring, for 30 seconds or until fragrant.
- Add tomato paste and canned tomatoes. Saute, stirring occasionally, for about 3-4 minutes or until cooked.
- Stir in cream. Season with salt. Add enough water to make
thick sauce. - Add garam masala and coriander (cilantro) leaves. Stir to combine. Simmer for about 2-3 minutes.
- Add grilled vegetables. Stir. Simmer for a minute.
- Garnish with coriander (cilantro) leaves.
- Serve with steamed rice, naan and parathas.
Notes
- Customize this tikka masala with your favorite vegetables like potatoes, asparagus, onion, shallots,
broccoli, zucchini, green peas, sweet potatoes, carrots, green beans etc. - You can also add paneer or Indian cottage with vegetables
