I’m not going to lie: I really love a tall 3-tiered cake covered with heavenly frosting. But on the other side, making a simple homemade cake has its own benefits: using basic ingredients minus nasties, having fun in the kitchen, and your creativity is the limit.
The good news is you don’t need a culinary degree to recreate this simple cake at home. We’re going to turn your favorite loaf cake into the ultimate surprise inside Christmas tree cake – just the right way to surprise your loved ones on Christmas Day.
Three Basic Parts Of This Cake
The recipe calls for two batches of cake batter, one tinted with green color. The green cake is used to create the small Christmas trees while the white batter is the main part of the loaf cake hiding the surprise trees inside.
The third part, frosting, is totally optional. However, I really love the idea of covering the loaf cake in green frosting giving it the ultimate festive look. Feel free to choose your favorite frosting, and I’ve opted for cream cheese frosting.
How To Make Christmas Tree Cake
Start with whipping up the simple and basic batter. Add a few drops of green food color to make it festive. Bake this in a lamington pan or Swiss roll pan. Once baked, leave it to cool before cutting them into cute little trees.
Next up, the trees are arranged in a straight line in the middle of the loaf pan. Whip up the white batter, and pour it into the sides. Once the cake is baked, the batter will rise and cover the trees thereby hiding them.
Finally, the frosting. Super simple cream cheese frosting tinted with green color. Pipe onto the top and sides of the cooled cake. I also like to add some festive sprinkles and powdered sugar to complete the look.

Ingredients
Christmas trees:
- 2 cups self raising flour
- 1 cup granulated (caster) sugar
- 2 large eggs, at room temperature
- 1/2 cup milk
- 1/4 cup oil
- 1 teaspoon pure vanilla extract
- A few drops of green food coloring
Christmas tree cake:
- 2 cups self raising flour

- 1/2 cup milk
- 1/4 cup oil
- 1 teaspoon pure vanilla extract
Cream cheese frosting:
- 140 g unsalted butter, softened
- 1 and 1/2 cups powdered (icing) sugar
- 2 teaspoons pure vanilla extract
- 500 g cream cheese, softened
- A few drops of green food coloring
- Festive sprinkles, to decorate
Instructions
Christmas trees:
- Preheat oven to 180 C or 350 F. Line a 24 x 30cm Swiss roll pan or lamington pan with baking paper. Set aside.
- Sift flour and sugar into a large bowl. Set aside.
- Place eggs, milk, oil and vanilla extract in a bowl. Whisk.
- Make a well in the center of the flour mixture. Pour wet mixture into the dry mixture. Add green food coloring.
- Using a spatula, gently fold in to create smooth batter.
- Pour this batter into the prepared cake tin. Smooth top. Bake for 15 minutes or until a skewer inserted in the center comes out clean. Cool completely.
- Using a tree shaped cookie cutter, cut out the Christmas trees from the cake. Set aside.
Christmas tree cake:
- Preheat oven to 180 C or 350 F. Line a 8x4-inch loaf pan with baking paper. Set aside.
- Sift flour and sugar into a large bowl. Set aside.
- Place eggs, milk, oil and vanilla extract in a medium bowl. Whisk to combine.
- Make a well in the center of the flour mixture. Pour in egg mixture.
- Using a spatula, fold in gently to create smooth batter. Set aside.
- Lay a row of evenly stacked Christmas trees in the loaf tin. Scoop the batter over the top to cover the trees.
- Bake for 40 minutes or until a skewer inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes and then pop out onto a rack to cool completely.
Cream cheese frosting:
- Place butter, half of sugar and vanilla extract in a large bowl.
- Using an electric mixer, beat until smooth. Add remaining sugar, cream cheese and green food coloring. Beat until just combined.
- Transfer frosting to a piping bag fitted with a star tip. Pipe frosting on the cake.
- Decorate with sprinkles.
