A simple cookie transformed into a stunner by dipping it in white chocolate, coated with grated coconut and decorated to resemble your favorite snowman. Snowman Cookies Recipe
Start with the cookie basics – creaming together butter and sugar. Make sure the butter is soft and at room temperature. With sugar, brown sugar is the best choice in this recipe. Beat them together until they are pale and fluffy. The mixture needs to to smooth.
Next up, add egg and vanilla extract. The egg needs to be at room temperature. Give this a quick whizz just to combine the ingredients. Flour and baking soda go in next alongside a small pinch of salt.
Now that the basic cookie dough is ready, you can move onto melting white chocolate, sprinkling with grated coconut and finally the decoration. The dough needs to be refrigerated for about 30 minutes. Depending on whether you want to make big or small snowmen, divide the dough into equal portions. Divide each portion into 1 big and 1 small portions.
Roll them into rounds and bake. While baking, the cookies will spread and you will get thick chewy cookies perfect for making cute snowmen.
Once the snowman cookies are baked and cooled, dip one side in melted chocolate. You can also sprinkle them with grated coconut to resemble snow. The beautiful scarf is made with sour rainbows. I added three dark chocolate chips for the cute buttons and black writing icing is the secret to perfect eyes.

Ingredients
- 150 g unsalted butter, softened
- 1 cup brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 2 cups all purpose (plain) flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 600 g melted white chocolate, to decorate
- Grated coconut, to sprinkle
- Sweet rainbow straps, to make scarves
- Dark chocolate chips, to decorate
- Black writing icing, to decorate
Instructions
- Place butter and brown sugar in a large bowl. Using an electric mixer, beat on medium speed for about 4 minutes or until pale and fluffy.
- Add egg and vanilla extract. Beat until just combined.
- Reduce the mixer speed to low. Add flour, baking soda and salt. Beat until combined.
- Using your hands, bring the mixture together. Cover with plastic wrap and refrigerate until chilled through, about 30 minutes.
- Preheat oven to 190 C / 375 F. Line two baking sheets with parchment paper. Set aside.
- Depending on the size of the cookies you want, divide the dough into 10 big or 20 small portions. Divide each portion into two parts - one big (for snowman’s body) and one small (for head).
- Roll and arrange on baking sheet to resemble snowmen.
- Bake for about 10-12 minutes or until the cookies are golden around the edges and soft in the middle.
- Remove from oven and let cool on baking sheets for 10 minutes. Then transfer to wire racks to cool completely.
- Once cooled, dip one side of the cookies in melted white chocolate. Sprinkle grated coconut over the body of the snowmen.
- When chocolate is set, use rainbow straps for the scarves and dark chocolate chips for the buttons. Cut small triangles from the rainbow straps for nose. Use black writing icing for eyes.
